The soil, thin and with large skeleton, consists of metamorphic granites, rich in iron minerals.
Vinification and aging: Manual harvesting is followed by soft pressing. After racking, fermentation takes place at 18°-20°C.The wine remains in contact with the fine lees for several months. Bottling in late spring and long aging in bottle.

Pairings
Balanced and fresh, with great character and surprising minerality.
Savory aftertaste with hints of Mediterranean maquis.
In addition to classic pairings with seafood and rustic cuisine, it finds an ideal match in fish hors d'oeuvres as well as cheeses that are not too aged.
