Description
The stony nature, the volcanic origin of the soil, and the hot, arid climate are qualities that Elba shares with many Mediterranean regions such as Sardinia and Corsica, where this grape variety excels.
The vineyards of Gorgaccio and Pascoli Alti, from which our grapes come, rise between two ancient iron mines; this circumstance makes Vermentino even more interesting for its distinct minerality, while the extreme proximity to the sea gives these vineyards a particular energy. Freshness and good acidity are guaranteed by the altitude of the vineyards.
Vinification and aging: after the harvest, when fully ripe, gentle crushing and white vinification in a horizontal press follow. After static racking, temperature-controlled fermentation begins; at the end of this stage, after a coarse settling, the wine remains in contact with the fine lees for several months. Storage takes place in stainless steel vats and bottle aging lasts at least three months.

Features and tasting:
Appearance: deep straw yellow color, with golden reflections.
On the nose: intense and persistent, fine and elegant, white fruit and citrus fruits and also a hint of Mediterranean scrub are evident.
On the palate: very balanced and fresh, harmonious and delicately fruity, good minerality and savory aftertaste, in the finish the hint of bitter almond is typical. It is recommended to be drunk at 11/12° C.
In addition to the classic pairings with seafood and rustic island cuisine, Vermentino finds an ideal link with raw fish appetizers, as well as with risottos, especially with asparagus; it also pairs nicely with mild cheeses, of medium consistency and not too mature.
